Chicken or Turkey Cracklings

Skin from about 2 KOL Foods organic, pastured Turkey breast or 1-2 lb pack of KOL Foods organic, pastured Chicken skin


 
Preheat the oven to 375° and line a baking sheet with parchment paper. 

Spread the poultry skin flat on the parchment and cover with another sheet of parchment and another baking sheet. set a heavy ovenproof pot on top. 

Bake for about 30 minutes, until the skin is crisp and golden. Drain liquid fat from sheet into a glass jar, store in refrigerator and use as schmaltz. 

Let skin cool slightly, then break into pieces.
