3 lb KOL Foods Cowboy or Ranch Steak, or stew or kabob
4 small potatoes
1 sweet potato
1 red onion
1 Tbsp thyme
Salt and Pepper to taste
1. Cube the meat, potatoes (including the sweet potato) and red onion into one inch pieces. Season generously with thyme and add a touch of salt and pepper.
2. Let the Cornish pie mixture sit in the fridge while you make your pastry (using your favorite recipe or biscuit mix).
3. Allow both the mixture and pastry to sit in the fridge separately for at least an hour
4. Spoon the mixture into personal size ramekins, cover with pastry and cook at 425 degrees for 45 minutes.
