Option 1: This roast is well-suited to slow braises
to create fork-tender, intoxicatingly flavorful meat. Put it in the slow cooker with onions, carrots, root vegetables and some red wine and you'll have a wonderful Shabbat dinner.
Option 2: Rub with your favorite spices and a handful of ground coffee, then cook in a low, slow oven (250-275 F or lower, if you dare!). It's done when the center reaches 125-130 F (Medium/Rare to Rare) Slice thinly and serve with dinner or on a sandwich.
