Roasted Turkey

1 KOL Foods Pastured Turkey
2 Clementines, oranges or tangerines
3 sprigs fresh sage
olive oil
salt and pepper

Wipe turkey with wet paper towel to clean, then pat dry. set turkey in a roaster, atop a roasting rack if you have one. Drizzle olive oil over turkey skin, and drizzle a couple tablespoons in and around the cavity. Sprinkle turkey inside and out with salt and freshly cracked pepper.

Separate leaves from sprigs of sage, and stuff underneath skin of legs, breast, and thighs. Add remaining leaves to cavity. Halve Clementines and stuff into cavity.

If turkey was refrigerated between preparation and cooking, remove the turkey from the refrigerator and leave it at room temperature for at least 1 hour. Preheat the oven to 400 degrees.

Put turkey into oven. After 30 minutes, reduce heat to 325 degrees, and continue cooking. Roast until a thermometer inserted into the deepest part of the thigh, but not against the bone, reads 165 degrees.
